Myrna’s Spanish Rice
1-3 jalapenos depending on taste one onion two tomatoes two garlic cloves a jar of red salsa two cups chicken broth one cup rice 3/4 teaspoon cumin Chop jalapenos, onion, tomato, garlic cloves. Heat chicken broth and red salsa in a saucepan. In a frying pan, fry one cup rice with the chopped onion, stirring often. After a few minutes, add the garlic cloves and jalapenos. Keep stirring until rice is almost a light tan, but do not allow it to burn. Stir about five minutes, add chopped tomato, stir well until really mixed up then add 3/4 teaspoon cumin. Add the hot mixture from the saucepan, bring to a bubbly boil. Turn down the heat and simmer, covering tightly. Don’t peek for 18 minutes. Uncover and stir it to distribute moisture. Cover until ready to eat.
SMSU invites students to apply for free during Minnesota State Month
Students interested in continuing their education with Southwest Minnesota State University can apply for free during Minnesota State Month. In an euort to make college more accessible, the standard processing fee is waived for applications submitted anytime during the month of October.

Advertisements, mailings, and pop-ups on the computer are designed to make you feel like you’re missing out on something whether it’s Medicare benefits you could be receiving or information on big changes happening with coverage.
Colder air pushes a freeze across the state
A warm airmass has been with us for the best several days. We have had the clouds hanging around at times too along with some light rain ou and on. A southerly flow has been pulling in the mild air, but it is also pulling in some moisture at times. The moisture has helped with the wild-fire concerns that can be quite high this time of the year.

Lakeview Cross Country travels to YME invitational
The Lakeview Cross Country boys and girls teams traveled to Granite Falls for the YME Invitational last week. The girls team finished in 4th place with a final score of 116 while the boys finished in 7th place with a score of 170. Ethan Schwankl finished in the top five, claiming the 4th place spot with a time of 17:10.
Upcoming special deer seasons
Minnesota’s youth deer season will take place statewide Thursday, Oct. 20, through Sunday, Oct. 23. The season coincides with statewide teacher workshops, so many Minnesota students don’t have school during the youth season.
Hunting regulations, deer hunting licenses now available
Deer hunting licenses can be purchased starting today and the 2022 Minnesota hunting regulations are now available on the DNR website (mndnr.gov/Hunting). Print copies of the regulations will be available in early August wherever licenses are sold. When deer hunters venture out into fields and forests this fall, they will find healthy deer populations faring well in most of Minnesota, ample harvest opportunities, and a continued commitment to managing chronic wasting disease management adaptively statewide.

Downtown Cottonwood buildings demolished
Last week, construction equipment was gathered on Cottonwood’s Main Street to demolish two buildings that have been slated for demolition for a while. The buildings had been slated by the City Council for demolition after being identified as hazardous properties, and are among plans to clear five vacant properties in total.

Quiet weekend with warmer weather on the way
The state of Minnesota got most of the rain out of the way on Friday just in time for the weekend. Duluth received 1.23 inches of rain for the most rain around the state. Meanwhile, Pierz was close behind with 1.18 inches. In addition, Nisswa reported .96 inches, Alexandria had .69 inches, Kimball received .52, Morris had .25 inches, and Elbow Lake reported .20” It was good to see some much-needed rain across the region. The clouds hung around rather tough for much of the day on Saturday. Sunday certainly turned out to be the better day of the weekend.
